Coconut Flour Flatbreads

It’s experiment time again. I was craving pizza but wanted a low carb version so I tried out this recipe for Coconut Flour Flatbreads from https://divaliciousrecipes.com/coconut-flour-psyllium-flatbread/




They turned out pretty good, it’s not breadlike so you do have to adjust your highcarb taste buds. The trick to making them is to cook them low and slow to allow the insides to cook through. These are pliable and would be good for wraps and sandwiches. 

Ingredients:
1/2 cup Coconut flour
2 tablespoons Psyllium Husk powder
3 tablespoonfuls Coconut oil (or melted butter)
1/2 teaspoon Salt
1 teaspoon Baking powder
1 Cup Boiling water
Herbs/garlic powder to flavour optional

Just mix all the dry ingredients and add the oil. It’ll look crumbly. Then mix in the boiling water half cup at a time till it comes together into a ball of dough. Rest the dough for about 10minutes and then roll them out into flat discs and cook on a dry pan or griddle pan to get some nice bar marks. They should puff up slightly when they’re done.
